Prosciutto di Parma Negroni D.O.P. – 24-Month Aged (Boneless)

Prosciutto di Parma Negroni is an authentic D.O.P. (Protected Designation of Origin) Italian dry-cured ham, aged for 24 months and produced exclusively in the Parma region, following the strict standards of the Consorzio del Prosciutto di Parma.

This designation guarantees origin, traditional production methods, and uncompromising quality one of Italy’s most respected culinary icons.

Traditional Production

Only select Italian pigs (Large White, Landrace, and Duroc breeds) raised on authorized farms in central and northern Italy are used. The pigs are fed a natural diet that includes cereals and whey from Parmigiano Reggiano production.

The curing process uses just four ingredients:
pork leg, sea salt, air, and time.

After careful hand-salting, the hams rest and mature in temperature-controlled environments before being air-dried in naturally ventilated rooms. Over time, the ham loses approximately 25% of its weight, concentrating flavor and developing its characteristic aroma. Each ham is inspected and approved before receiving the iconic Parma Crown mark.
