Gnocchi al Pesto Genovese Dinner Kit

Gnocchi al Pesto is one of the most famous dishes of the Ligurian Tradition, made with potato gnocchi and basil pesto, rich in taste and easy to prepare. The authentic Pesto Genovese is made with freshly-ground D.O.P. Genovese Basil, Ligurian extra virgin olive oil, pine nuts, salt and garlic. Some recipes also include Parmigiano Reggiano cheese. Gnocchi, with their typical ridges, have a twisted shape that perfectly blends with the pesto sauce. 

The kit contains:

- 1 Maffei Potato Gnocchi 1.1lb (500g)

- 1 Ligurian Basil Pesto Jar 6.3oz (180g)

- 1 Ligurian D.O.P. Extra Virgin Olive Oil 16.9fl oz (500ml)

Preparation

Bring a large pot of salted water to a boil and cook the gnocchi until they float to the surface, about 2/3 minutes. Place the pesto sauce in a large bowl. Drain the gnocchi and reserve one cup of cooking water. Toss the gnocchi into the bowl and mix until blended by adding some cooking water to thin the pesto sauce. Finish with a drizzle of Ligurian extra virgin olive oil, grated Parmigiano Reggiano (optional) and fresh basil. Serve and enjoy!
