Don’t just call them onions lampascioni are something else entirely. These wild, foraged bulbs are a true delicacy from southern Italy, known for their unique sweet-and-sour flavor with a rustic, slightly bitter edge. Preserved in oil with mint and chilli following a traditional Apulian recipe, they capture the essence of the Mediterranean in every bite.

Unlike cultivated crops, lampascioni grow naturally in the wild and can’t be farmed. Their beautiful purple flowers may catch the eye, but the real treasure lies buried 5–10 cm beneath the soil. It takes skilled hands and specialized tools to extract them intact, making each jar a testament to the patience and craftsmanship of expert foragers.

Each bulb is hand-cleaned, blanched in water and vinegar, and cured over several days to mellow its bitterness—then carefully preserved in a flavorful blend of sunflower oil, extra virgin olive oil, fresh mint, garlic, and a hint of chili heat.

Serve them as part of an antipasto platter, alongside cured meats and cheeses, or add them to mixed salads for a punch of southern Italian flavor.
